The Global GS -5 140mm is always the go to  vegetable or make that anything knife for comfort and feel.There is a nice width and thinness in the blade and just takes a beautiful edge.Great edge retention also coming in at a very nice hardness maxing out at 59 Rockwell C.A favourite handle by many bringing  the knuckles away from the board and also allowing for smaller hands.Always love sharpening this knife with its very consistent temper and accuracy of manufacturing in Japan.
